Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 green bell pepper diced
  • 2 medium carrots sliced
  • 2 potatoes diced
  • 1 cup black beans cooked
  • 1 cup corn kernels
  • 1 tomato chopped
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat olive oil in a large pot.
  • Add onion and garlic, cook until soft.
  • Stir in bell pepper and carrots.
  • Add potatoes and tomato, mix well.
  • Pour in chicken broth.
  • Add beans, corn, cumin, and oregano.
  • Season with salt and black pepper.
  • Bring soup to a boil.
  • Lower heat and simmer 30 minutes.
  • Garnish with cilantro before serving.
